The cellar of Domaine DUMETRIER is the fruit of long architectural reflection. The coherence of our work plays out between these walls. We chose for it to be in our image and for its features to reflect the spirit that animates the entire project.
It is a building set into the ground, which allows us to benefit from a temperature that is naturally suited to the winemaking process.
The vats of various sizes allow us to vinify plot by plot, and offer us the possibility of understanding and bringing to light the unique characteristics of each plot and each vintage.
Each of these vats is, every year, dedicated to a single plot of the estate. This vinification respects strict plot-by-plot management, and will make it possible, during blending, to use the full palette of wines produced on the terroir of Domaine DUMETRIER.
The heart of our cellar is the barrel room, an ensemble buried in the ground, whose base is an inverted stepped pyramid and whose top is a truncated pyramid. The origin and the accomplishment.
In this sacred place that radiates a vital energy, our wines transform and evolve to fulfil our dream: to obtain wines of exception.
